Made with fresh whole cow's milk, Provolone Gigante Spicy is a semi-hard cheese aged for a minimum of 30 days and made according to a traditional technique typical of Southern Italy: the filatura (spinning). Thanks to this technique, the curd becomes stringy and it's possible to mold it into every shape.
