The Affiorato Extra Virgin Olive Oil from Dinoabbo is an outstanding monocultivar Taggiasca olive oil with a rare delicacy and sweetness. Dino's Taggiasca olives are handpicked daily from the plants between the months of November and February. The extra virgin olive oil is obtained using an antique method of cold crushing and light pressing, called affiorato. The oil drips from the stacked fiscoli, or nylon fiber cages filled with olive paste, and then is separated from the vegetation water by the expert hands of Dino's wife. The flavor is delicate and sweet and is accompanied by notes of almond and pine nuts.

The Dinoabbo farm is a family run business located in the small and ancient village of Lucinasco, near Imperia, in the region of Liguria. Dino and his wife opened the olive mill in 1960 and today they have a series of olive groves for a total of about 9,000 plants. Dino passed away in 2006, but his family has continued to produce as it has done for 50 years with respect to his memory and teaching. Dino chose to not never join the Riviera Ligure DOP as the specification or the Organic certification because there was no need. Dino used to say: “only the oil our land gives us.” He taught his clients to trust in his work and he has always been the only guarantor of the quality of his oil.
