The Crucolo is a semi-soft cheese named after the homonym mountain shelter founded in the 1800s in the Valsugana region, which became famous for its prized wines and rich cheese selection. Made from pasteurized whole cow's milk and aged for 3 months, the result is a sweet and intense cheese with a buttery ending. Enjoy it with a glass of wine during a delicious aperitivo.

Founded in 1782, the Rifugio Crucolo is the oldest family-run Osteria, or tavern, in Trentino. Famous for its regional delicacies, the Purin family has developed and passed down from generation to generation recipes that reflect and uplift the traditions of Trentino.
