The cuisine of Sardegna (Sardinia) has a deep connection to the mountain pastures where many of the island’s citizens lived to avoid the invading armies arriving by sea. Today Sardegna is among one of the most beautiful and untouched territories in Europe. Many Mediterranean civilizations have historically touched the shores and hills of Sardinia, leaving behind their gastronomic traditions, or even perhaps taking inspiration from the island’s unique cuisine. Latin, Arabic, Spanish, and Catalan influences are reflected in the preparation of meats, cheeses, wines, seafood, and wild game. On our first stop to Sardegna, we’ll explore the island’s use of meat and abundant wild herbs. In this class, guests will:
