  • Please note, this is a demonstration and tasting format class, no hands-on activity will take place.

  • All guests planning to consume alcohol must be able to produce valid government-issued identification to prove they are 21 or older.

Paul Ellis

Paul, also called " il Professore" in Las Vegas has been in the business for more than 3 decades.

 

Starting in UCLA for 12 years as a Wine Instructor, teaching all three levels of certification, he also created a new program "Vintages" focusing on professionals needs. 

While his time in California, Paul was also a consultant for Christie's Auctions in Beverly Hills.

Then he became the regional manager for Champagne Louis Roederer, and owner of Templar Wines, consulting and importing wines company.

 

Arriving in Las Vegas, Paul joined the high-end restaurant on the city: Sommelier at Rao (Caesars Palace), Assistant General Manager at Aquaknow (The Venetian), General Manager at Napa (Rio Hotel) to name a few.

Then, he occupied the Wine Director position at the famous Charlie Palmer restaurant at Four Seasons, then for the MGM Grand Hotel, with a particular overview on The Mansion.

 

No one could represent the "Learn" part of Eataly better than Paul when we talk about wines.
