Explore the difference between an 18-month and 24-month stagionatura, or aging period, and then savor the prized Red and Brown Cow varieties, made with milk from the Rossa Reggiana and the Bruna cows, both heritage Italian breeds whose milk is particularly suited to making extra delicious Parmigiano Reggiano.
