Inspired by local traditions, Antica Dispena specializes in the artisanal production of Piemontese delicacies. Their egg pasta is made with Italian free-range eggs and Italian durum-wheat semolina; each shape is drawn through a bronze mold and air-dried at room temperature for at least 48 hours.

Paglia e Fieno, green spinach and yellow egg tagliolini, literally translates to “straw and hay.”

The thin noodles represent the fall harvest when hay bales are rolled up to make feed for the winter. Cook in boiling water for 3-4 minutes.
