The White Condiment from Dodi is made with the sweet juice of White Trebbiano grape mixed with high-quality white vinegar. The color of this white dressing is white because the Trebbiano grape juice is not cooked compared to the Balsamic Vinegar of Modena IGP that it is cooked. The White Dressing is mixed with white vinegar compared to the Balsamic Vinegar that is mixed with red vinegar. It is aged for 2 months in small open barrels.
Drizzle over salads, fish, shellfish, chicken, pork, and rice salad. Density: light.
