The 'Corte Padana' Balsamic Vinegar of Modena IGP from Acetaia Dodi is obtained by aging a mixture of Dodi's cooked grapes must and wine vinegar in their famous casks. The resulting distinct flavor with a high degree of acidity lends a light and discreet taste to a variety of uses, from drizzling over vegetables, thinly-sliced cured meat, and game and poultry.
It is excellet on salads, heirloom tomatoes, meat or fish.
