The 'Diamante Nero' Traditional Balsamic Vinegar of Modena DOP Aged 50+ years from Acetaia del Cristo is aged for more than 50 years.
This Balsamic Vinegar is obtained from cooked grape must of selected Trebbiano and Lambrusco grapes from the countryside of Modena. This extraordinary product is slowly aged for more than 50 years decanting and refilling six antique series of barrels in various wood: cherry, mulberry, juniper, oak, or chestnut.
This product has a glossy, dark brown color and a full-body flavor.

Flavor: Intense and rich bouquet with intense complex sweet-bitter ending.
Pairing Ideas: steaks, risotto, Parmigiano Reggiano DOP, gelato, fruit and vegetables.
Ingredients: Cooked Grape Must.

A legacy of wood casks began with the partnership between Eugenio Barbieri and Loris Bellei. The pair combined their collection of century-old heirlooms for aging vinegar and with time, came more casks and a farm that grew into L'Acetaia del Cristo.
