Though its ingredients are often as simple as flour and water, pasta is an art that spans shapes, sizes and regions. When we handpicked our pasta products for eataly.com, we wanted to celebrate that richness while adhering to simple principles of artisan production: every shape is extruded through a bronze mold and air-dried for 24-48 hours to ensure pasta of the perfect consistency to stick to sauce. The tradition of rice in Italy is as rich as pasta. The main rice varieties even make up a piece of Italian legislation that officially categorizes them by 3 types: "comune" or "short-grained," "semifino" or "medium-grained," and "superfino" or "fino," "long-grained." Short-grained rice like arborio is high in starch to better soak up stock while making risotto, while long-grained rice like carnaroli is considered the "king of rice" for its uncanny ability to remain both creamy and al dente. Brown Rice preserves the most nutritious and fibrous part of the rice grain, the complete germ as well as the bran (the coat). Just one cup of brown rice will give you 88% of your daily magnesium.
